Method

Method

Ingredients

  • 2 cups all-purpose flour
  • 2 cups blueberries
  • 1 cup sugar
  • 1 teaspoon salt
  • ½ cup milk (dairy or nondairy)
  • 2 teaspoon baking powder
  • 2 teaspoons vanilla extract
  • ½ cup oil
  • 2 eggs

Method

  1. Preheat the oven to 400 degrees
  2. Line standard size 8-10 muffin cups with paper liners
  3. Whisk together all the dry ingredients in a large bowl
  4. Mix together the oil, egg, milk, and vanilla. Whisk to combine.
  5. Add the milk mixture to the dry ingredients and combine with a fork.
  6. Fold in the blueberries. Pour the batter in the muffin cups. Sprinkle some sugar on top of each muffin
  7. Bake for about 15-20 minutes. Cool in a cooling rack and serve. They can stay fresh for 2-3 days at room temperature or frozen for three months.
